S’mores Cookies
S’mores cookies are so sleepover coded and when my bestie from high school said she’s hosting a fun bookclub sleepover with the girls I just knew exactly what I wanted to bring…
S’mores cookies!
Ingredients
Wet
✅ 220 grams White Sugar
✅ 300 grams Brown Sugar
✅ 320 grams Unsalted Butter
✅ 2 large Eggs
✅ 4 teaspoons Vanilla Extract
Dry
✅ 480 grams Plain Flour (2 cup or xx ounces)
✅ 2 teaspoons Baking Soda
✅ 1 teaspoon Baking Powder
✅ 1 teaspoon Salt
Add in/ons
✅ 150 grams milk Chocolate (+ a few pieces for topping)
✅ Mini Marshmallows (1/2 cup) (+ a few extra for topping)
✅ Digestive cookies (5 cookies chopped up for topping)
1. In a large mixing bowl, cream the butter and both sugars together (until light and fluffy which should take about 4 minutes on high speed). (pssst: start slow though so everything doesn't fly out of your bowl!)
2. Add the egg and vanilla extract to the bowl and whisk together on a low speed until well combined (about 2 minutes)
3. In a separate mixing bowl, mix together the flour, baking soda, baking powder, and salt.
4. Roughly chop up your milk chocolate and mix into the bowl of dry ingredients. Mix in the marshmallows.
5. Mix dry and wet ingredients together with a spatula until just combined.
6. Preheat oven to 170°C (350°F) and line two baking trays with a silicone mat (or parchment paper).
7. Using a medium-sized spring loaded cookie scoop, scoop out ball and (using your hands) form into a cookie ball.
8. Pop each cookie onto the lined baking trays and space them at least 2 inches apart (keep it to about 6 cookies per tray).
9. Bake in the oven for 11 minutes (or until slightly golden around the edges).
10. Once the cookies are baked (when they’re still hot), use a large cookie cutter to ‘swirl’ each cookie inside, creating a perfectly round cookie.
11. Let cookies *nearly* completely cool down on their tray (about 10 mins) before gently pressing some of the reserved mashmallows, chocolate chunks, and chopped digestive cookies into the top of each cookie before they cool down completely (then move cookies to a wire rack to fully cool down - which should be another 15ish minutes).
